Mystery Diners is the American reality television series on Food Network. The series, hosted by Charles Stiles, debuted on May 25, 2012. Stiles is the owner of the California-based Business Evaluation Service and Mystery Shopper Services.

Plot
The event focuses on Mystery Diners, an organization that is at the request of certain owners disguised in certain restaurants and organizes undercover strokes and invisible surveillance cameras to catch naughty restaurant employees in action.
Beginning in Season 9, Mystery Diners made changes to the format including the addition of private detectives, new technology, new charts and opening credits, and advanced equipment. In the opening sequence, Stiles recounts the changes made under the pretext that restaurant staff have become increasingly aware of events and companies, and becoming smarter in their deceit.
Consultation
Charles greeted the owner with his signature, "Charles Stiles, Mystery Diners" at the beginning of the episode. He and one of his friends, Mystery Diners, met restaurant owners in their restaurant to discuss problems with restaurants before opening, or neutral places, and Charles learned about possible suspects. Charles then tells the owner that his team will come after office hours to move restaurants with hidden cameras and microphones.
The narrator gives details about where hidden cameras and microphones have been set up (usually with floor plans that present simplified layouts of the foundation), and also mentions Mystery Diners that will masquerade as new staff members or customers. Microphones and cameras are installed only in areas where restaurants are legally permitted and customers and employees have no privacy expectations (with toilet and locker rooms universally excluded from sting), and sometimes set outside on the corridors and 'breakroom' spaces of the company , both outside and inside.
The Sting
Charles and its owner (s) operate from control room settings, usually in isolated parts of buildings without easy employee access, or in other nearby buildings that are temporarily rented during the length of the sting. A wide range of widescreen LCD televisions featuring live camera recordings and graphics involving confined subjects are configured in a multi-screen matrix and switching system in use, together with an audio monitoring establishment via a shotgun microphone. The Mystery Diner dummy employees and customers connect with duplex two-way communication hidden to Stiles and control rooms, either through audible means and/or hidden cameras in common objects such as eyeglasses or other personal effects.
- Usually one undercover team member (who may have spent several days at the establishment before sting) was introduced as a trainee attendant to staff by its owner (s). The owner then retreated to the control room to watch the events that were not revealed. Although the owner (s) are usually contacts, this individual may act on behalf of the owner. On several occasions, subordinate employees or colleagues have contacted Stiles to sting the owner accused of oversight, restaurant operations, or theft.
- Some episodes also dealt with the subject of Stiles who did a sting on behalf of the owner who judged someone who wanted to sell his company to gain their trust; in all cases, buyers are shown to have ill intentions for their purchase.
- Others on the team appear as regular visitors, map out service progress and food quality, and generally observe staff to help reveal what happened during the restaurant's regular operations.
From Season 9, Charles also brought with him one of his personal investigators who showed the owner's information he discovered while conducting background checks on employees and details related to any illegal activity.
Confrontation
After seeing enough, the owner drops down and gathers the staff members responsible for the matter and takes them to the control room to be confronted by Charles Stiles, an event that usually ends with a staff member being fired and/or occasional law enforcement intervention. if a confrontation becomes violent (although some people have seen the sting and quickly escaped from the building before a confrontation can occur). Otherwise, innocent staff members who have been proven to have been manipulated by troublesome staff members, however, are usually spared by the owners. There are also cases where staff members are simply reprimanded, or stopped without allowing the owner to take action against the employee.
The Next Four Months or Restaurant Updates
At the end of the event during the credit closing, the narrator tells the viewer what happened after the recording to the former employee, the remaining employees, and whoever was involved, and reported the current status of the restaurant. A graphic at the end of each episode states "Certain events may have been repeated for dramatic purposes." The 'four months later' renewal element is canceled over time and the segment takes the title of a generic 'restaurant update', as the program can save their editing process to spin the episode in much less than the previous season.
