History and development

The recipe for cream soda - written by EM Sheldon and published in Michigan Farmer in 1852 - called for water, tartar cream (tartaric acid), Epsom salts, sugar, eggs and milk, to be mixed, then heated , and when cold is mixed with water and a quarter teaspoon of soda (sodium bicarbonate) to make a bubbly drink. It is suggested as a preferred drink of simplicity than "Uncle Bacchus" and in accordance with the recently introduced Maine Law.

Alexander C. Howell, of Vienna, New Jersey, was granted a patent for "soda-water cream" on June 27, 1865. Howell's cream-water cream was made with sodium bicarbonate, water, sugar, egg white, wheat flour, and "False one common flavoring ingredient - such as lemon oil, vanilla extract, pine, to taste "before drinking, cream soda water mixed with water and acids such as tartaric acid or citric acid. In Canada, James William Black of Berwick, Nova Scotia was granted a US patent on December 8, 1885, and a Canadian patent on July 5, 1886, for "ice cream soda". Black cream soda, which contains whipped egg whites, sugar, lemon juice, lemon, citric acid, flavoring, and bicarbonate sodas, is a concentrated syrup that can be reshaped into a frothy drink by adding ordinary ice water.
