Mesclun ( French pronunciation: Ã, [m? s'kloe?] ) is mixed salad from a variety of young green leaf salad from Provence, France. Traditional blends include chervil, arugula, lettuce and endive, while the term mesclun can also refer to a mixture of freshly prepared fresh bayo salads, available which may include: lettuce, baby spinach, arugula (rocket or roquette) , Swiss chard (silver bit), green mustard, endive, dandelion, frisÃÆ' à © e, mizuna, mÃÆ' à ¢ che (sheep lettuce), radicchio, reddish brown, or other leafy vegetables.

Origins
The name comes from the Proven̮'̤al mesclu m , derived from the verb mesclar , for "mixing it thoroughly," and literally meaning, "mix "According to Merriam-Webster's dictionary, the term was first used in 1976. According to local stories, mesclun came from farmers around Nice, each bringing their unique and precious mix of babies to the market of the peasants; one of the most representative and authentic versions of combined dandelion babies, lettuce and arugula.
Recorded Chef Alice Waters's comment, "The outdoor market in Provence flauntly exhibits, a melange of the first tender young leaves that appear in the garden. Mesclun > can be a remarkable mixture of lettuce: rockets, similar to rugola (arugula) found in the Italian market, chervil, mÃÆ' à ¢ che, or sheep lettuce, and oak leaves.Sometimes, curly (chicory) or green young dandelions find their way into the medley, depending entirely on the peasant's personal preferences combined with any reality that may send shoots in places where mesclun grows. "

In the North American food service industry, the first appearance of mesclun was traced back to restaurants and agricultural positions in the early 1980s, with increasing popularity ever since. Mixed mesclun i is described as consisting of baby lettuce and other green vegetables (and often herbs) in various shapes, colors, textures, and flavors. Depending on the season, the mixture may contain about a dozen to three dozen varieties of green babies, including red and green oak, romaine and lolla rossa lettuces, frisÃÆ'à © e, tatsoi, bok choy (joi choi), arugula, spinach, orach, mizuna , dandelion, mustard greens, and garden lettuce. If available, local sources, directly from breeders are recommended through commercial bulk packaging for the best taste and freshness. This mesclun version, sometimes considered evolution, is also known as spring blend .
